CELEBRATE THE AUSPICIOUS NEW YEAR AT THE ST. REGIS MACAO

The St. Regis Macao is offering a range of exquisite culinary delights and experiences for
guests to celebrate the auspicious Year of the Rabbit this Chinese New Year.
 
The Manor
The Manor brings back the Stories of the Sea and debuts its latest evolution, The Eleventh
Chapter. The six-course menu crafted by Executive Sous Chef Michele Dell’Aquila has been

designed to showcase the extravagant array of seasonal ingredients from around the world
as well as to entice the palate with exceptional flavor and texture.
 
To start, the Kyoto King Crab from Japan is served with carrot, beetroot yuzu and Amarelli
licorice sorbet. The combination of ingredients gives contrast to the inherent richness and
sweetness of the king crab and refreshes the palate. For the next course, the Sicilian Red
Prawn is centered with stracciatella and almond panna cotta, cherry blossom and Calvisius
Royal caviar; followed by the Boston Lobster dashi and Jerusalem artichoke soup served
with green asparagus. To impart a rich yet delicate flavor to the Boston lobster, Chef
Michele has infused coffee to the Jerusalem artichoke, giving a layered flavor profile to the
dish.
Dive deeper into your culinary journey with the Pinched Agnolotti served with Ligurian
scampi, crustacean sea urchin sauce and Smoked Mediterranean Turbot dressed with
Maître d’hôtel butter, garden leek and farm potato. As the fish symbolizes abundance and
prosperity in Chinese culture, especially during the New Year, Chef Michele aptly showcases
the dish with a promise to satisfy your taste buds through the fish’s robust natural
sweetness and seasonal flavors.
For an ideal finale, try the Chocolate Millefeuille – a Valrhona Manjari chocolate mousse
with chestnut, Tonka bean, and mango jelly, a feast for the eyes and senses.
 
Guests can elevate their dining experiences further with a specially curated wine pairing by
Sommelier David Duan. Featuring a selection of premium wines from around the world,
ranging from Champagne, German Riesling, New Zealand Sauvignon Blanc, Provence Rosé to
Burgundy premier cru Red and finishing with a 10-year-old Port from Portugal, all the wines
are designed to accentuate the decadent flavors and seasonal produce of the dishes.
The Stories of the Sea – The Eleventh Chapter set dinner is available from 6:00PM –
11:00PM and is priced at MOP1,288+ per person, or MOP1,788+ per person with wine
pairing.
 
The St. Regis Bar
Celebrate Chinese New Year at The St. Regis Bar with our invigorating Baijiu cocktails,
bringing in two unique tastes of Baijiu-based concoctions, ‘Twilight of the South’ and
‘Mandarin Fizz’, giving the complex flavours, a delicate balance and unique aromas. We
continue to bring in soulful jazz musicians to delight your senses, including resident musician
Aaron, vocalists Betchy, Winnie, Amanda, Jandira and her band ‘The Sunset Soul Trio’. Book
