A renowned chef named Melba Nunis, from Malaysia’s Portuguese creole community of Kristang in Malacca, together with Macao University of Tourism’s (UTM) chefs will join forces for the “Melaka Kristang and Macanese Food Promotion” event scheduled to be held at UTM’s Educational Restaurant from 17 to 20 September and on 22 September.
Malacca, also known in Malay as Melaka, is a Malaysian state located in the Malay Peninsula’s southern region, bordered by Negeri Sembilan to the north and west as well as Johor to the south. Despite its diverse ethnic and cultural presence, the state is known for its Portuguese Settlement neighbourhood, regarded as the centre of the country’s Portuguese creole community known as the Kristang people.
The Kristang cuisine shares strong connections with Macau’s very own Portuguese creole cuisine, the Macanese food, which is often regarded as the world’s oldest fusion cuisine.
During the promotional event, the Educational Restaurant will provide a semi-lunch buffet and dinner buffet with Malaccan Kristang and Macanese food, allowing customers to explore the flavours of these two fusion cuisines presented by Nunis and the UTM chefs.
In addition, the university’s Institute of Executive and Professional Development (IEPD), in collaboration with the Educational Restaurant, will host a special “Kristang Cuisine Master Chef Demo” in the Demo Kitchen on 18 and 19 September, during which Nunis will show a Kristang food cooking demo, followed by a Q&A session.
Born and raised in a Kristang community in Garden City, Ujong Pasir, Malacca, Nunis grew up surrounded by Malacca’s 500-year-old legacy of the early Portuguese and Dutch settlers, and this rare and unique combination of influences resulted in the birth of many flavourful masterpieces, according to UTM.
She opened her restaurant Simply Mel’s in 2011, a highly successful business with a solid reputation for serving good traditional cooking of the rare Kristang cuisine. Her goal is to introduce the Kristang cuisine to as many people as possible.
